A last minute OMG - I forgot the cake - naked cake for less than $20!

Uh, guys. I made a cake. No I didn't bake it, but I did put it together, and it tastes super yummy! This is quite an achievement for me, who burns boiled vegetables, makes baked goods that could be used as weapons, and has children who are visibly worried to try anything I cook. Thank god for my husband!

If you are hosting a Baby Shower, Engagement, Birthday or even a Wedding, and need a last minute - OMG I forgot the cake - cake, then this is it. $20 and 20 minutes is all you need!

Naked cakes are so popular as they are so easy and versatile. Add whatever toppings you like!

  • Pre-made circular cake bases x 4 (or bake your own)
  • Sieve
  • Spatula Knife
  • Cake Stand
  • 6 tbsp thickened cream
  • 4 cups powdered sugar
  • 1 tsp vanilla
  • 1 cup butter
  • 1/4 tsp salt
  • Raspberries
  • Blueberries
  • Strawberries
  • Flowers
  • Free printable flags (optional)

1. In a medium bowl, mix butter, powdered sugar, vanilla, cream and salt and whisk until light and fluffy. If too thin add more powdered sugar, if too thick add more cream.

2. Place 1st base on cake stand. Using your spatula, spread the frosting across the top of the base, making sure to make a thicker bead around the edges (enough so that it squishes out the sides). Repeat with the remaining 3 bases. As you place them down, push them down a little so the frosting oozes out the sides.

3. Once all 4 bases are stacked together, if you want to spread the frosting a little to make it look more flat on the outside, then use your spatula to do so. I felt like it was likely I would ruin the cake doing this, so I left it as is! Remember, this is supposed to be a quick and simple last minute cake, so don't get too caught up on this step. A naked cake is all about the decorations on top rather than the cake itself!

 4. Roughly place your berries on top, and garnish with flowers.

5. Using your sieve, hold it above the cake and sprinkle some powdered sugar over the whole thing (optional but looks really pretty!). If you want to add a bunting banner, use our free printable flags to add whatever text you desire, and voila!

There you have it! A last minute - OMG I forgot the cake - cake.

Sorry I can't be more helpful with baking the bases, but I could burn a tin of baked beans so you certainly don't want my advice. However, I found this drool-worthy recipe from Natasha's Kitchen  which would work just as well if baked in a round cake tin!

The wonderful thing about this cake, is that it is so versatile. I simply used berries as they taste and look good, but you could leave it completely bare and just add flowers, you could use kiwi, lemon slices, 100's & 1000's, you name it! Same with the filling, you could add jam, different flavoured frosting, whatever takes your tastebuds fancy.
